Baklava

Baklava is a sweet dessert made of layers of flaky filo pastry filled with crushed nuts and sweetened with honey syrup.

Serving Size: 24 pieces
Prep & Cook Time: 1 hour
Equipment: Bowl, Food Processor, Baking Tray, Saucepan

  • 6 oz shelled pistachios, chopped
  • 6 oz walnuts, chopped
  • 6 oz hazelnuts, chopped
  • 1/4 cup sugar
  • 1.5 tbsp ground cinnamon
  • pinch of ground cloves
  • 16 oz filo dough
  • 1 to 2 sticks of unsalted butter, melted
  • 3/4 cup sugar
  • 1 cup cold water
  • 1 cup honey
  • 1 tbsp orange extract
  • 5 whole cloves
  • 1 lemon, juice
  1. Preheat oven to 176°C.
  2. Make the Honey Syrup: Place the sugar and water in a saucepan and heat stove-top, stirring occasionally, until sugar dissolves. Add the honey, orange extract if using, and whole cloves; stir to mix. Bring to a boil, then lower heat and let simmer for about 25 minutes. Remove syrup from heat and let cool to lukewarm. Add lemon juice. Remove the whole cloves.
  3. Make the Nut Mixture: In the bowl of a food processor fitted with a blade, add the pistachios, walnuts, and hazelnuts. Pulse a few times to chop. Transfer to a large mixing bowl and add sugar, cinnamon, and ground cloves. Mix well to combine.
  4. Prepare the Filo Pastry: Unroll the thawed filo pastry and place the sheets in between two clean kitchen towels.
  5. Assemble the Baklava: Prepare a 9”x 13”x 2” baking pan. Brush the interior of the baking pan with some of the melted butter. Place one sheet of filo in the pan, brush with melted butter.
  6. Repeat this process a few more times until you have used up about 1/3 of the filo pastry, each layer being brushed with the melted butter.
  7. Distribute about ½ of the nut mixture evenly over the top layer of filo.
  8. Continue assembling the baklava, one sheet of filo at a time, and brush each layer with melted butter.
  9. Distribute the remaining ½ of the nut mixture evenly over the top layer of filo.
  10. Finish the remaining 1/3 of the filo pastry, brushing the very top sheet of filo with butter.
  11. Cut the Baklava Pastry Into Pieces: Using a sharp knife, cut the pastry into 24 diamond-shaped pieces.
  12. Bake: Place the baking dish on the middle rack of your heated oven. Bake for 35 to 45 minutes or until the top turns golden.
  13. Pour Syrup Over Hot Baklava: As soon as you remove the baklava from the oven, pour the cooled syrup all over the hot baklava.
  14. Cool Completely: Allow baklava to sit for a few hours before serving or for at least 1 hour. Cut through the earlier marked pieces. Serve with a garnish of chopped pistachios, if you like.

Knafeh

Knafeh is a Middle Eastern dessert with a layered crispy pastry and sweet cheese soaked in syrup. It is crunchy on the outside, cheesy on the inside.

Serving Size: 15 pieces
Prep & Cook Time: 45 minutes
Equipment: Baking Tray, Saucepan, Mixing Bowl

  • 500g Shredded Filo dough
  • 3/4 cups ghee
  • 1 tsp Knafeh food color
  • 500g sweet cheese
  • Fresh mozzarella
  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • Rosewater extract
  • Pistachio, chopped for decoration
  1. Prepare the cheeses. If using an alternative to sweet cheese which contains salt, soak in water for 2 hours. Then slice into ¼" slices along with the mozzarella.
  2. Preheat oven to 232°F and prepare your baking pan by brushing butter inside.
  3. Shred the filo into 1-3" long strands and mix the ghee with the food color. Coat the filo with this mixture.
  4. Add ¾ of the filo to the pan and press down firmly to create a tart-like casing.
  5. Add a layer of sweet cheese and mozzarella, press down both cheeses.
  6. Add the remaining filo on top and press down.
  7. Bake for 20-25 minutes until the Knafeh is golden and crispy on the edges and bottom.
  8. Prepare the syrup by mixing sugar, water, and rosewater extract in a saucepan. Bring to a boil and simmer for 1-2 minutes.
  9. Once baked, turn the Knafeh out onto a serving dish and pour the cooled syrup over it.
  10. Decorate with chopped pistachios, slice, and serve warm!

Halva

Halva is a Middle Eastern dessert that is a sweet, nutty, and smooth treat made with only 5 simple ingredients.

Serving Size: 20 pieces
Prep & Cook Times: 3 hours
Equipment: Baking Tin, Saucepan, Sugar Thermometer, Spatula

  • 1 1/2 cups sugar
  • 1/2 teaspoon cardamom
  • 1/2 cup water
  • 1 2/3 cups tahini
  • 1 teaspoon vanilla
  • 1/2 cup unsalted pistachios, chopped
  1. Coat a loaf pan with nonstick spray and line with parchment paper.
  2. Combine tahini and vanilla in a heat-proof bowl.
  3. In a saucepan, simmer sugar, cardamom, and water until sugar dissolves.
  4. Boil until the syrup reaches 121°C on a candy thermometer.
  5. Slowly pour the syrup into the tahini and stir vigorously. Add pistachios and mix.
  6. Pour into the loaf pan and refrigerate for 24 hours until set. Slice and serve at room temperature.
